It's official...

I suck at blogging... I've been so busy that I don't get a chance to sit down and write about my day to day stuff.

Well, I'm sick. I have a pretty bad cold and I am hoping it goes away soon and that Ethan does not catch it. It won't be pretty for the both of us if he does. Anyways, I will be making some Tiramisu today. I am so excited. I have found a profound love for baking (not that we bake Tiramisu). I will let you know how it comes out..

Day 8

Yesterday a couple of friends, Sean, and I went to Dave & Buster's for our "Pre-Valentine's Day" celebration. We had such a blast.

Today we went for breakfast on the beach with my sister in law and her boyfriend, our friend Luz, Sean, Ethan, and I. It was such a beautiful day and I got to try out my camera in manual for the first time. I have been so scared and have been using it on automatic for the most part, but today all my pictures were in manual. I think they came out nice, but who am I to judge?? I will go on Photoshop and edit them tomorrow, but here they are unedited.

Day 6

I actually exercised today!!!!

Well, I went skating for a little bit with Ethan. I didn't realize how out of shape I was until today. I am definitely going to make it a point to go skating more often, since that is one of the only exercises I can do with Ethan.

For some reason my internet is so slow today and it is aggravating me because I've been trying to finish a quiz online and I can't refresh because it'll lose all my information. Sigh. I thought I wasn't so supposed to have computer problems with a Mac, a one month old Mac nonetheless.

Well I made Chicken Parm for dinner today. It came out sooooo good. I have some leftover that I'm contemplating on eating as soon as I finish writing this post.

 Here is the recipe if you would like to make it.

1 tablespoon olive oil
6 skinless, boneless chicken breast halves (about 1 1/2 pounds)
1 1/2 cups Prego® Traditional Italian Sauce or Prego® Organic Tomato & Basil Italian Sauce
1/4 cup grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese (about 6 ounces)
  • Heat the oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook for 10 minutes or until well browned on both sides.
  • Stir the sauce and 3 tablespoons Parmesan cheese in the skillet.  Reduce the heat to low.  Cover and cook for 10 minutes or until the chicken is cooked through.  Sprinkle with the mozzarella and remaining Parmesan cheese.  Let stand for 5 minutes or until the cheese is melted.

Day 4

Got my test results and I got a 93.
Yep, that's right, I'm back. I thought that by taking a semester off I would've lost my school mojo, but that was not the case. It is definitely harder, but feasible.

In other news, I got my bandage from my surgery taken off and I can finally go wash my hair after almost a week. Once my right hand is healed, I will get the left one worked on. Here are some pictures of what my hand looks like now.



For some reason you really can't see my huge bruise on the palm of my hand, but its there.


After my surgery follow up Ethan and I decided to go visit my dad for a while, he was very happy to see Ethan us. We got home just in time for me to give Ethan his dinner and start his bedtime routine. He decided he wanted to feed himself, so he took the spoon away from me.

                     I love these and could stare at them ALL day.


         I wonder if I can make some money off of these models dogs??

Ughh, I feel so tired and lazy right now. Maybe I will do something productive tomorrow, like skating or something along those lines. We shall see!!!

Day 3

So I really don't have much to say today.

I am overall pretty tired because I went to bed late last night and Ethan took a 30 minute nap today, but that was only because I slept with him. He wanted nothing to do with napping in his crib today. We went for breakfast with my sister in law, Jamie and hung out at home, he tried yogurt for the first time today, he loved it , and I've been doing some homework. All in all a good day. Ohh, we got his passport today, which means we will booking our trip to Colombia soon.

Here are some pictures I took today of what was Daisy's "bed". I bought her a x-large dog bed for her cage and she wanted me to know that that was not ok.
